1 c. flour
½ tsp. baking soda
½ tsp. salt
½ tsp. ground cinnamon
1 c. butter softened
1½ c. packed brown sugar
2 eggs
1 tsp. vanilla extract
3 cups quick oats
1 cup raisins if desired

Preheat oven to 375º. Line cookie sheets with parchment paper, set aside.

Combine flour, baking soda, salt and cinnamon on a sheet of parchment paper, set aside

Cream butter and brown sugar together in a large bowl, with an electric mixer 2-3 minutes or until light and fluffy. Beat in egg and vanilla. Gradually add flour mixture and beat until well blended. Stir in oats and raisins if desired. Drop by rounded teaspoons onto parchment-lined cookie sheets.

Bake, 10-12 minutes or until golden brown. Slide cookies on parchment onto a wire rack to cool.
