1-½ C onion, minced
¼ - ½ green pepper, chopped
1 clove garlic, chopped
1-½ lbs ground chuck
½ lb sliced mushrooms
2 C grated carrots
1 can cream of mushroom soup
1 can cream of celery soup
1 46 oz can V8 juice or tomato juice
1 can red kidney beans, undrained
½ - 1 tsp salt
½ tsp paprika
¼ tsp cumin
¼ tsp oregano

Directions:
Directions:
Saute minced onion, green pepper and garlic clove in butter. Brown and drain ground chuck and mushrooms. Add grated carrots, cans of soup, V8 or tomato juice, seasonings. Cook for 2-3 hours.
