1/2 C starter
1 C Milk
2 C Whole wheat flour (I will probably use King Arthur flour)
1 T honey
1 t baking soda

Mix starter with milk.

Add 2 cups flour, stir well. If dough is very wet add another 1/4 cup flour.
Continue adding flour until you have somewhat of a sticky dough, you do not want it too dry.

Once dough is made cover bowl for 8 or more hours to sour.

Preheat griddle medium low heat. You don't want muffins to brown to quickly because the middle needs to cook.

Sprinkle sea salt, soda & honey onto sour dough. Use wooden spoon to turn into itself a few times.
If you think sticking will be an issue add a Tablespoon olive oil on the counter before kneading & rub excess on your hands. Knead for a few minutes, concentrating on incorporating the ingredients.

Pull portions from dough ball, shape into muffins directly on your griddle. To about 1/2". Brown.

If muffins are not as firm as you like put in oven 350 degrees for 5 - 10 minutes.
