1/8 c olive oil
1 T minced garlic (fresh or dried works equally)
1/2 tsp dried basil
1/2 tsp dried marjoram
1/2 tsp dried dill week
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp crushed red pepper flakes (more or less depending on your taste)
1/2 tsp salt
4 large potatoes (any variety including sweet potatoes), peeled and cubed.

Preheat oven to 475º F
In a large bowl, combine oil, garlic basil, marjoram, dill week, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
Roast for 20 - 30 minutes in preheated oven, turning occasionally to brown on all sides.

NOTE: can be cooked at lower temps or cook in a smoker along with your meat.

This is a huge success everytime I make them. We have a smoker and use it constantly for these potatoes. We have had much success with making adjustments to the spices, cook temps and times.
