8 slices sourdough bread
8 to 12 slices Monterey Jack cheese
1 lb. sliced roast beef
2 cans (4 oz. each) whole green chiles
Butter
Grated Parmesan cheese (optional)

Directions:
Directions:
Place sourdough bread on a work surface. Place 1 to 1-1/2 slices of cheese on half the bread slices, making sure the cheese covers the bread. Place roast beef on top on cheese. Open and drain the green chiles. Place 1 to 1-1/2 green chile on each sandwich, arranged so you get a little in every bite. Place 1 to 1-1/2 slices of cheese on top of the chiles. Top with remaining bread slices. Lightly butter outside of each sandwich and sprinkle with grated Parmesan cheese, if desired. Place in pan. Cook slowly until golden; flip the sandwich to cook other side.
