3/4 c. white sugar
3/4 c. brown sugar
1/4 c. dark Karo syrup
1/4 c. butter cubed
1 T. water
2 t. cornstarch
3 eggs
1/4 t. salt
1 t. vanilla
1 1/2 c. chopped pecans
whole pecans for garnish
unbaked pie crust

Directions:
Directions:
Preheat oven to 350º. Roll out the pie crust. Make sure you flour on both sides for easy serving. Flute the edges, then place in refrigerator while making the filling. Combine white sugar, brown sugar. 1/4 c. butter and Karo syrup in a saucepan. Mix 2 t. cornstarch with the 1 T. water. Add to the saucepan. Bring the mixture in the saucepan to a boil mixing to make sure the sugars get dissolved. Cool mixture. Beat the 3 eggs until frothy, do not overbeat. Add salt and vanilla. Slowly add the cooled sugar mixture to the eggs. Add the chopped pecans. Pour into the prepared crust. Decorate with the whole pecans. Bake 20 min. Then cover the crust and bake and additional 30 min until set. Cool and enjoy

I sometime add 1 T of Bourbon instead of the vanilla. Also you could add 1/4 c. of dark cocoa to make it a chocolate pecan pie. Anyway it is good. Serve it with ice cream or fresh whipped cream or both.
