3 Eggs
1 C Oil
2 C Sugar
2 C Peeled and grated zucchini
2 t Vanilla
3 C Flour
1 t Baking soda
1/4 t Baking powder
1 t Salt
3 t Cinnamon
1/2 C nuts
Directions:
Directions:
*Beat eggs till light and foamy

*Add next 4 ingredients and mix lightly but well

*Mix remaining dry ingredients, except nuts in bowl

*Add dry miix slowly to wet mix beating till mixed

*Add nuts, mix

Bake in 2 loaf pans for 1 hour or until done @ 325
