3 chicken breast
8 cups chicken broth (2 large containers broth)
1 TBS butter
1 bay leaf
1 cup chopped celery (about 3-4 stalks)
1 cup chopped onion (about 1 medium)
1 cup thinly sliced carrots (about 2-3)
salt and pepper to taste
1 package egg noodles

In a large pot over medium heat add chicken breast, chicken broth, butter, carrots, celery, onion, bay leaf, salt and pepper. Bring to a boil and reduce heat to medium low, cook until chicken falls apart, about 1 hour. Remove chicken, shred. Increase heat to med high, add noodles and cook until tinder...8-10 minutes. Add chicken back to pot, heat and serve.

Note about boiled chicken: I always bring to a boil and immediately reduce heat to med low. It is much tastier and tender when you cook it on low.
