5 - 6 medium potatoes peeled, and cut up into chunks
salt

Sauce:
1 medium red onion sliced thin (or chopped)
2 T. butter
2 T. flour
½ tsp. salt & ½ tsp. pepper
1 c. half & half
1 T. Dijon style mustard
½ c. mayonnaise
4 slices bacon, cooked & crumbled
1 tsp. dried or fresh thyme

Directions:
Directions:
1. Cook potatoes in salted water just until fork tender. Drain and put into a buttered 1 ½ qt. casserole.

2. Melt butter in a pan. Cook onions until tender, but not brown. Blend in the flour, salt, & pepper.
Slowly add half & half, stirring constantly until sauce thickens. Remove from heat - cool slightly. Add mustard and mayo. Stir until well blended. Spoon sauce over the potatoes. Bake at 350º for about 30 minutes or until bubbling and golden brown. Garnish with crumbled bacon and thyme.
