Kale Potato Soup Recipe

Ingredients: 1 large bunch kale (chopped) 1 T. butter 1 large onion (chopped) 1 clove garlic 2 or 3 large potatoes (diced) 5 c. water or broth ½ tsp. salt or to taste ⅛ tsp. pepper or to taste
Optional: one cooked chicken breast, cut into cubes

Directions: |
Directions:Boil chicken breast, cut into cubes and set aside. Steam the kale and set aside. (Don't try to cook it with the potatoes; the flavor will be too strong.) Melt the butter in a soup pot. Add the chopped onion and sauté until golden. Add garlic and sauté another minute. Add the potatoes and 2 c. of hot water or broth. Bring to a boil, reduce heat and simmer until potatoes are soft. Remove half of the cooked potatoes; purée the rest with the cooking liquid and return to the soup pot. Return the reserved potatoes and add the steamed kale and chicken to the soup pot. (If a smooth texture is desired, everything may be puréed.) Add 3 c. of water or broth. Add salt and pepper to taste. Heat gently until hot and serve. |
