"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
8 chicken breast halves 1 can Italian-style stewed tomatoes 1/2 tsp. oregano 1/2 tsp. thyme flour salt & pepper butter
Cut chicken breast halves in half again. Mix flour, salt (I use crazy salt) and pepper in a plastic bag. Shake chicken pieces in bag to coat with flour mixture. In electric frying pan or dutch oven cook chicken pieces in a small amount of butter. Brown on both sides, adding butter if needed. Add in remaining ingredients, lower heat and cook covered for about 1 hour.
