Burnt Sugar Pie Recipe

Ingredients: 3/4 c sugar 1 c water 2 1/2 Tbs flour 2 Tbs sugar 2 egg yolks 2 c milk 2 Tbs butter 2 1/2 Tbs cornstarch 1/2 tsp salt 1 Tbs vanilla
**9" baked pie crust

Directions: |
Directions:Put 3/4 c sugar in a skillet (heavy teflon or iron) and stir constantly until slightly brown but not burned but just a little darker than you want it to end up (it will be lighter when the milk is added) *
Take off heat & add 1 c water, stirring until sugar disolves
Add 2 c milk & the butter
In a small bowl mix 1/4 c sugar, flour, cornstarch & salt
Whip egg yolks & add to dry ingredients
Gradually add some of milk mixture into yolks & dry ingredients-then gradually add this to remaining milk
Cook & stir over medium heat until it thickens
Add vanilla & more butter if desired
Pour into a 9" baked pie crust ** |
