½ cup butter
½ cup granulated sugar
½ cup light brown sugar
1 egg, beaten
½ teaspoon vanilla
½ cup chunky peanut butter
1 ½ cups flour
1 tsp. baking soda
½ tsp. salt
1 apple, grated (pared)

Directions:
Directions:
Preheat oven to 375 degrees. Cream butter and sugars. Add lightly beaten egg and vanilla. Stir in peanut butter. Sift dry ingredients and add to mixture. Add grated apple. Form into balls and place on greased cookie sheet. Press flat with fork. Bake 10 – 12 minutes.
