1 ½ c wild rice
10-12 c chicken broth or stock
1 large onion, diced
1 celery stalk, diced
1 c butter, divided
¾ c flour
1-2 chicken breasts, cooked and shredded
2-3 c half and half

Directions:
Directions:
Rinse rice, then cook in chicken broth until tender.
Saute vegetables in ¾ cup butter until soft.
Remove veggies, set aside. Add rest of butter and flour to the pan and cook for 5 min, stirring constantly.
Slowly add broth to butter mixture. Cook 5 min, stirring constantly.
Add rice, veggies, and chicken.
Add half and half right before serving, heat through. Do not boil

A friend brought this to me after Avonlea was born. It was absolutely delicious and I insisted that it be on the menu for Christmas Eve that year.
