Ingredients: 1/2 cup + 1 Tbsp very good extra virgin olive oil 4 cloves of garlic, finely chopped 1 1/2 tsp salt freshly ground black pepper 4 Tbsp flat leaf parsley, fine chopped
1 lb. spaghetti or linguini
Parmesan Reggiano, to finish (optional)

Directions:Chop your garlic and parsley before you start and set aside until needed.
In a skillet, heat the oil, add the garlic and cook until garlic is softened and fragrant -- NOT browned. (NOTE: If the garlic turns brown, you'll have to start over using fresh garlic and oil.)
Add the salt, pepper and parsley. Stir well and remove from heat immediately. This should take only seconds; the salt, pepper and parsley are not to be cooked, but rather they flavour the oil. Toss with pasta.
NOTE:
Make the sauce while the pasta is cooking. Cook pasta in salted boiling water according to package directions. As soon as pasta is cooked, drain it and add the sauce. Toss until pasta is well coated.
Add freshly grated Parmesan cheese, if you wish. |

Notes: Needie (Barry's Mom) used to make this at Bwana House (our old cottage). We got talking, on one such occasion, and the garlic browned. She threw it out and started over!
