1 Tablespoon, Butter
1 Tablespoon olive oil
1 Medium onion, thinly sliced
3 garlic cloves, smashed and peeled
5 cups canned crushed tomatoes
1 cup broth
2/3 cups heavy cream or 1 can coconut milk
2 tsp kosher salt, plus more as needed
ground black pepper
1/2 tsp crushed red pepper flakes
1/4 tsp oregano

Directions:
Directions:
In a large saucepan, heat the butter and olive oil, cook onion until translucent about 5 minutes. add garlic cook one minute. Add the tomatoes, broth, spices. Bring to a boil, lower heat to a simmer and simmer for 15 minutes. If you used whole tomatoes soup will need to be pureed either with immersion blender or in small batches with a stand blender. return to pot and add heavy cream or coconut milk. reheat to simmer. serve.
