Ingredients:  
3 Cups Pecans - Roasted at 325º for 15 minutes and then set aside
4 Large Eggs
1 Cup Lyle Golden Syrup; NEVER corn syrup
3/4 Cup Turbanando sugar (plain white sugar works too)
1/3 Cup Unsalted Butter - melted
1 jigger good rum (optional)

Unbaked pie crust

Directions:
Directions:
Mix all ingredients - except nuts until smooth. Pour into unbaked pie crust. Pour all the pecans on top. Push them into the mixture as necessary with a spoon. Add more pecans if you wish. Bake at 350º for 50 minutes. After 30 minutes, shield edges to prevent burning.
