5 lbs beets - cover beets with water... bring to boil and cook at med. heat for 1 plus hour....check depending on size of beets for tenderness. When tender put in cold water and peel skin off beets... cut as desired and place in bottle... cover with Syrup and cap with sterilized caps. ( sterilize bottles by washing and placing in oven with at 250 degrees until ready to fill with beets and hot syrup). Wait for caps to pop and bam... you are good to store. If it doesn’t pop ... put in fridge and use first.

Pickling Sauce:
2 Cups Sugar
2 Cups Water
2 Cups Vinegar
1 TBSP Cinamon
1 tsp All Spice
Pinch of Cloves
1 lemon sliced if desired
