2 c. flour
½ c. sugar
2 eggs
2 c. milk (add ¼ - ½ c. more for thinner pancakes)
4 level tsp. baking powder

Directions:

Dry mix:
Place dry ingredients in large bowl. Whisk to combine

Wet Mix:
Measure milk into a medium bowl. Add beaten eggs and combine well before adding wet mix to dry mix and stirring well.

Allow to rest 5 mins or so. Mixture will be thick and slightly bubbly.
Do not stir batter before cooking on a medium hot griddle.

Store well
Freeze well

Note: stir optional berries or chocolate chips into dry mix before combining gently with wet.

My mother, Edna Kinnon made dollar sized versions of these for her delighted grandchildren. I now make them for her equally delighted great grandchildren. Lovely, easy recipe.
**substitute buttermilk for milk for extra flavor
