400gr of Gnocchi (made with semolina if possible)
One piece of Salmon of about 300 gr (or two pieces of 150 gr)
1 Shallot
15 gr Powdered Sugar
Cream
Dill
Sea Salted Butter

Directions:
Directions:
1. Cook the gnocchi in butter for 5 minutes.

2. Put the gnocchi cooked separately and peel the shallots on top of it.

3. Cut half the salmon into small cubes (0.5-1 cm) and the other half into large cubes (2-3 cm).

4. Place the large cubes in a pan over low heat, add the powdered sugar and salted butter; Toss well to caramelize.

5. Then add the gnocchi and the shallots and toss a lot.

6. Add a ladle of cream with dill; Simmer 5 minutes;

7. Turn off the heat and add the small cubes and mix only once.

8. Serve with parmesan and a good white wine.
