4 Bell Peppers
1 Medium to Large Head of Cauliflower (grated with a cheese grater)
2 Cloves of Garlic
1 lb. Grass Fed Ground Beef (optional)
2 - 14.5 oz. cans of Tomatoes (drained)
1 Heaping Tbsp. Chili Powder
Garlic Salt to Taste
Salt and pepper

Directions:
Directions:
1. Cut tops off the bell peppers and remove all seeds.

2. Place peppers in a large pot of water and bring to a boil until peppers become slightly soft, 5-10 minutes after water comes to a boil. Drain.

3. While peppers are cooking, heat 2 teaspoons of Olive Oil in a large skillet.

4. Brown ground beef and drain off fat.

5. Add grated cauliflower, garlic, 1.5 cans of tomatoes (reserve the rest for the topping), chili powder, garlic salt, and pepper. Cook for 15-20 minutes, until cauliflower is softened, stirring occasionally.

6. Heat oven to 350°F.

7. Place filling into peppers, rounding the filling the top. Place stuffed peppers into a greased baking dish.

8. Place remaining tomatoes on top of each pepper.

9. Bake for 15 minutes.
