2 cups water
1 cup quinoa
2 cups cherry tomatoes
1 1/2 cups chopped fresh spinach
1 ripe avocado
1 mango cubed
pomegranate seeds (optional but a great addition around the chagim)
sunflower seeds (optional)

Dressing:
1/3 cup extra virgin olive oil
1/3 cup lemon juice (preferable fresh)
2 Tbsp honey
2 cloves garlic
1 tsp kosher salt

Directions:
Directions:
Cook quinoa according to package directions.
Add all veggies and fruit
Combine ingredients for dressing in a container and dress just before serving.
