1/2 White Onion - Chopped
Bunch of Italian Parsley - Chopped
3 lbs hamburger
5 eggs
1/2 bottle tomato sauce
Grated Cheese
1 lb flour
1/4 cup oil
1/4 teaspoon salt
2 lbs sliced salami
2 lbs slices provolone cheese
warm water

Step One
Cook the white onion and parley together until the onion is salaute. Add hamburger and cook until browned.Remove any greese. Add the 1/2 bottle of tomato sauce. Pasta sauce works even better.

Step Two
Separate two egg whites and hold for later. Add two more eggs and the yolks to bowl and mix together. Add a handful of grated cheese and 1 egg shell of water for each egg. Add salt and pepper.

Step Three
Put 1 lb of flour in bowl and form a small cup in top of flour. Add 1 egg, 1/4 cup of oil and 1/4 teaspoon of salt. Add small amount of water to flour and begin mixing. Add more water until mixture come together and is of a pliable consistency. Cut dough into two pieces, one about 2/3 of mixture and the second the remaining 1/3. Roll out larger piece of dough to cover the bottom and sides of a 1 inch baking pan. Dough should be very thin, maybe 1/8 of an inch thick.

Layer the bottom of lined pan with hamburger mixture from step one. Add to coat pan with thin layer. With spoon, sprinkle the egg mixture from Step two over hamburger. Add layer of salami and then cheese. Repeat with a second layer of meat, egg mixture, salami and then cheese.

Roll out the dough for top. Cover top. Then use fork and pinch top to sides. Use fork to poke holes in top to allow steam to vent. Whip the retained egg whites to foam. Smear the foamed egg white over top. Bake at 350 degrees for between 1 hour to and 1 1/2 hours. Cake should be browned and mixture cooked together.

This was generally cooked the weekend before the start of lent. It was served the day after Ash Wednesday, as we could not eat meat on Ash Wednesday.
