Bulgar/ Lentil Salad Recipe

Ingredients: 1/2 c coarse bulgar 1/2 c black lentils 1 sweet potato - peeled and cubed 1-2 tsp oil pinch of salt 2 tomatoes - diced 2 cucumbers - diced 1/2 onion 3 Tbsp silan Juice of half a lemon (1.5 Tbsp) 3 Tbsp olive oil 2 Tbsp craisins 1/2 tsp salt pinch of pepper 6 oz. feta cheese - crumbled or shredded 3 Tbsp glazed pecans

Directions:1. Make bulgar and lentils according to package instructions (recipe says to soak bulgar in 1/2 c boiling water for 30 min - I dont do that)
2. preheat oven to 400º. Toss sweet potato cubes with oil, place flat on baking sheet, sprinkle with salt. Bake until soft. About 20 minutes.
3. Combine all ingredients into a bowl, using silan+lemon juice+olive oil as "dressing". Sprinkle cheese and pecans on top. Takes just as delicious without the cheese for a meat meal. |
