1- 9 inch pie shell
1 egg yolk
3 cups chopped green onions
¼ cup butter
2 cups thin cream
4 eggs beaten
salt
pepper
basil (dry or finely chopped fresh)

Line pie pan with pastry and brush with the egg yolk. Bake at 450 º F. for 5 minutes. Reduce the oven temperature to 300 º F. Place an empty pie pan on top of the one lined with shell and return it to the oven and bake until the pastry is brown. Cook the green onions in butter till soft but not browned. Put them over the bottom of the pie shell. Scald the thin cream and let it cool slightly. Add beaten eggs, salt, pepper and basil to the cream. Pour over onions and bake at 350º F until the custard is set.

How to scald milk or cream: In a heavy bottomed sauce pan, add milk and heat on medium-low.
Stir frequently to ensure milk doesn’t burn on the bottom of the pan.
Keep heating the milk until it starts to steam and small bubbles start to form around the edges of the pan. It’s important not to BOIL the milk. Remove from the heat..Because milk and cream are pasteurized it is no longer necessary to scald them but some recipes call for it.
Before adding the eggs make sure the cream has sufficiently cooled or you will end up with "scrambled eggs".
