1 head of garlic
2 tbsp olive oil
6-8 yukon gold potatoes
1 tbsp salt
1 cup warm milk
1 stick of softened butter (¼ cup)
salt & pepper to taste


Directions:
Directions:
- Slice head of off garlic
- drizzle garlic head with olive oil and season with salt and pepper.
- wrap head in aluminum foil and bake in oven at 400°F for 40 minutes.
- Remove head from oven and cool after baking.
- cook potatoes in salted water.
- bring to a boil and simmer until fork tender, about 20 to 30 minutes, drain well.
- while potatoes are still warm, press through potato ricer into a large mixing bowl.
- whip in the warm milk, softened butter until potatoes are fluffy.
- squeeze roasted garlic cloves out of the skins into the potatoes and mix.
