3 lbs. potatoes
6 hard boiled eggs, diced
1 small onion diced very fine
3/4 cup Miracle Whip salad dressing
1 teaspoon yellow mustard
2 Tablespoons sugar (or more is like sweeter)
1 cup cottage cheese (secret ingredient)

Well here goes: Boil the potatoes. When fork tender put them on a cookie sheet to cool completely. When completely cooled use a biscuit cutter to finely chop the potatoes. Cook and cool the hard boiled eggs and finely chop those as well.

In separate bowl mix Miracle Whip, mustard, sugar, onion and cottage cheese. Pour this mixture over the eggs and potatoes.

If after mixed is to dry add more salad dressing and/or cottage cheese. Salt and pepper to taste. Garnish with sliced hard boil eggs and dash of paprika for color

The secret is finely chopping everything.

These amounts are estimates as I never measure anything when making tater salad, so just experiment... Be sure to put the cottage cheese in as that is the secret. Best when eaten the next day.
