German Potato Salad Recipe

Ingredients: 5 medium potatoes cooked with jackets on 2 med. onions, chopped 4 slices bacon, diced and fried 1 heaping T. flour 2 T. bacon fat 1/2 C. vinegar 1/2 C. water 1/2 C. sugar Salt and pepper to taste

Directions:When potatoes have cooled, peel and dice.
Fry bacon and set aside. Drain fat; return 2 to 3 T. to pan and add chopped onion. Sauté until nearly translucent but not browned. Add flour and stir; add vinegar and water; cover and simmer until smooth and thickens. Add sugar, salt and pepper (a lot of pepper is good) and potatoes. Adjust seasoning as necessary. I quite often make two batches of the sauce, like 1 C. of vinegar, water and sugar as it does absorb it when it sets and with the extra sauce it stays more moist. |

Notes: I wish I could claim this as a family recipe, but it was given to me by a friend who worked with me at WCC (Charles). He was from a German family in Saline. As a teenager he helped his mother cook at German weddings in the area and helped her develop their own potato salad recipe that became quite famous in the area. it is so good that I decided to include it in this book for all to enjoy.
