2 C- white sugar
1 can- evaporated milk
4 eggs, beaten
water for bath

In a preheated pan, caramelize ½ cup sugar over medium heat. Pour immediately into 6x4x2 baking pan or an oval tin pan. Coat entire bottom of the pan and allow to cool.
In a bowl, combine remaining sugar and milk and stir until sugar has dissolved. Add eggs to mixture and whisk until well blended. Using a fine strainer or cheesecloth, strain the mixture into the baking pan or oval tin pan.
Place some water in a pot and then immurse the filled pan making sure that the water reaches just half way below the rim. Steam back in oven at medium heat for 15 minutes or until flan is cooked.
Remove pan and allow to cool. Slide a knife along the sides of the container to loosen the flan, then invert pan onto a serving dish to allow flan and caramel syrup to slide out. Serve chilled.
