1 lb. lasagna noodles, partially cooked 6-8 minutes
½ lb. mild cheddar cheese, shredded
¾ lb. longhorn cheese, shredded
5 lb. potatoes, mashed and seasoned to taste
3 medium onions, sliced

Directions:
Directions:
Add cheese to potatoes before mashing so it will melt; set aside. Saute onions in 2 sticks of butter. Put layer of noodles the length of pan, then layer potatoes ½ to 1 inch thick. Spread onions and butter on top of them, then another layer noodles width-wise, then potatoes, then onions and butter. Finish with noodles on top. Cover with foil and bake at 350º 45 minutes. Remove from oven and set aside 15 minutes before cutting into squares.

Makes 1 9x13 and 1 square pan.
