Buy or make 2 standard pie crusts, whole wheat preferably. Put one in a pie tin.
I bag (16 Oz) frozen mixed vegetables
1 package of vegetarian chick'n (Trader Joe's has a good one)
1 10-12 oz can of mushroom soup
1 tsp of salt or seasoning salt
1 tsp of onion powder
1 teaspoon of pepper

Directions:
Directions:
Mix mushroom soup (non-diluted) with chick'n and vegetables and seasonings in a bowl.
Pour mixed contents into prepared pie crust, then cover contents with top crust.
Crimp edges and poke fork holes into the top crust, to allow steam to escape.
Put pie tin on a cookie sheet, to catch any spillage.
Bake for 45-50 minutes, in a 350º oven, until crust is nicely browned.
Remove from oven and let rest for 10-15 minutes and then enjoy.

Serve slices of pot pie with a salad or another vegetable side dish 🥗
This pie can be made vegan with vegan chick'n and dairy free mushroom soup, butter free pie crust.
Also, to keep it vegetarian, make sure your pie crust is not made with lard.
This is a staple dish at our house, we eat it at least once a month. Enjoy!!
