2 medium sweet potatoes
olive oil, spray
1 tablespoon butter
1 small shallot, diced
1 clove garlic, diced
1 bunch spinach
4 eggs
1 cup mozzarella cheese, grated
¼ cup goat cheese, crumbled
¼ cup parmesan cheese, grated (to sprinkle on top)
salt and pepper, to taste

Directions:
Directions:
1.Preheat oven to 400 degrees F and prepare a pie dish with olive oil spray or butter.
2.Peel sweet potatoes and slice thinly. Lay potato slices out in pie dish in a crust-like fashion, spray with oil, and bake for about 15 minutes or until the potatoes are slightly soft. Remove from the oven and reduce temperature to 375 degrees.
3.Heat a large saute pan over medium heat. Add the tablespoon of butter. Once melted, add the shallot and cook until transparent, about 5 minutes. Add the garlic and spinach, tossing until spinach is wilted and tender, about 4 minutes. Drain off the water released from the spinach.
4.Whisk eggs in a medium bowl. Then stir in the mozzarella and goat cheeses.
5.Combine the spinach mixture with the egg and cheese mixture. Add salt and pepper to taste. Pour the combined mixtures into the crust. Sprinkle with parmesan cheese on top.
6.In a 375 degree oven, bake until the quiche is firm and the cheese has browned, about 40 minutes.
7.Serve warm and enjoy!

Once upon a time, there was a girl named Tali who believed "why spend a lot of time cooking when you can make something more simple that still tastes great and spend the extra time doing fun things instead?" So I have no specific story that comes to mind but I just think of a lot of good memories with a lot of laughing and a lot of heart-to-hearts... rascal flats concert (where I actually think we had our first discussions about Zev), weekly dinner dates with Oph (so sad that they stopped), Berkshires trip with the concert and a random show on the lawn (and wasn't there a ropes course in there too?), good coffee dates on my West Side porch (which should only continue), running in the Five Towns and just so many more... All I can say is that I appreciate Zev's love of cooking so you'll have even more free time to continue doing all those fun things...
