2 tablespoons butter -- softened
1 cup sugar
3 tablespoons flour
½ teaspoon salt
3 eggs -- seperated
1 lemon -- juice and rind
1½ cups milk
1 8 inch unbaked pie shell

Directions:
Directions:
Cream butter and sugar together. Add flour and salt.

Separate the eggs and add egg yolks to mixture. Add lemon juice, grated rind and milk.

Beat egg whites and fold into mixture.

Pour into an unbaked pie shell and bake at 325º for 40 to 45 minutes.
