2 tsp olive oil
4 oz pancetta, chopped
2 tsp minced garlic
2½ cups whipping cream
1 cup freshly grated parmesan
8 large egg yolks
¼ cup fresh chopped basil leaves
¼ cup fresh chopped parsley
salt
450g spaghetti, cooked
1 roasted chicken
fresh ground pepper
1 tbsp grated lemon peel

Directions:

- Heat oil in large pan, add pancetta and garlic and saute until crisp (8 minutes), cool slightly
- In large bowl, whisk together the cream, cheese, yolks, basil and parsley to blend
- Cook spaghetti according to package directions
- Add chicken to the pan with pancetta, stir to combine and add spaghetti and cream mixture.
- Toss over medium heat (4 minutes), season to taste and transfer to serving bowl, sprinkle with lemon zest.
