1 1/2 c. flour
1 1/2 c. sugar
1 tsp. soda
3/4 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 c. pumpkin
1/2 c. cooking oil
2 eggs
1/3 c. water
(1/2 c. nuts optional)

Directions:

Mix all together and bake in a loaf pan at 350 degrees 45 to 50 minutes. (I like to use the small loaf pans that I have in a set of four).

Most often a can of pumpkin has more than a cup of pumpkin in it. Sometimes I measure the whole can and adjust the recipe to make a larger batch and use the remainder for pumpkin muffins.
