3 good sized green peppers
1.5 pounds ground beef
2 cups diced onion
2 cups diced green pepper
1 egg
1 can tomato soup, divided
1 large can crushed tomatoes
1 15 oz can tomato sauce
1 tsp salt
1/2 tsp pepper
1 cup instant rice
1 carrot grated

Cut tops off the 3 peppers, cut in half and take out ribs and seeds.

Saute onions and peppers - allow to cool. Put half of the onions and peppers with half the can of tomato soup, undiluted, in a saucepan with tomatoes, tomato sauce, and grated carrot. Bring to a simmer on cook on low for about a half hour.

Mix together the ground beef, remaining sauteed onions and peppers, egg, salt, pepper, and rice along with remaining half can of tomato soup mixed with a 1/4 cup water.

Put some sauce on bottom of 9 X 13 pan. Stuff each half with filling and put on top of sauce. Pour rest of sauce over the peppers. Cover with foil and bake at 350º for about an hour. If peppers seem soft, allow to bake uncovered for an additional 1/2 hour.
