2 1/4 c. sugar
1 1/2 c. cake flour
1 1/2 c. egg whites
1 /2 tsp cream of tarter
1/4 tsp salt
1 tsp almond or vanilla extract

whip egg whites a few times add salt and whip a few more times add cream of tarter and whip until hold peaks
Fold in 1/4 c. sugar
sift together 6 times the remaining ingredients - 2 c. sugar and flour
Fold into whites add flavoring last
Start oven at 250' and into 15 min change to 275', 15 min more change to 300', 15 min more change to 325' and then an additional 10-12 min to finis
invert and completely cool
