6# bag boneless chicken thighs
2-3# cajun sausage, sliced
chopped green onion
chopped celery
chopped bell pepper
1/2 container of Tony's powdered roux
1-2 gallons of water
Tony's, garlic, salt, black pepper to taste

Directions:
Directions:
Combine all ingredients together in a covered pot and bake in the oven for several hours or on top of the stove. Don't cover if you are cooking on the stovetop. More roux may need to be added for darker gumbo.


For EZ rice, mix equal parts rice and water in a pan with a tight lid. Add salt and stir well. Bake @ 350 until all water has cooked out and rice is tender, stirring several times during cooking. My favorite is parboiled rice but long grain or brown rice works well also. Serves 10-20.
