1 cup softened butter
2 cups sugar
4 eggs at room temperature
2 teaspoons vanilla extract
2 cups mashed banana
2 tablespoons lemon juice
1 cup sour cream
3 cups sifted flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup sifted powdered sugar for dusting top of cake after it's cooled.

Preheat oven to 350º. Prepare bundt pan or 2 loaf pans with Bakers Joy spray. Combine and cream together the butter and sugar, then add eggs one at a time and then vanilla. In a separate bowl mash bananas, add lemon juice and then sour cream, mix lightly. Add all of the wet mixture into the sugar, egg and vanilla mixture. Then, add flour, soda and salt until well blended. Pour into prepared pan(s), bake for one hour or until done. Allow to cool for 20 minutes, remove from pan, inverted onto plate or cake stand. Sift small amount of powdered sugar over top of cake.

This cake freezes well for later use. Serving tip: it tastes great with peanut butter spread on a slice.

Additional note: This cake was the Overall Baked Goods 1st prize winning recipe at the County Fair in Charleston, SC
