3 T vegetable oil
2 medium red onion, diced
3 T minced garlic
1/4 cup chili powder
1 T ground cumin
2 lbs. ground beef
1 1/2 tsp. kosher salt
2 (15 oz) cans of rotel
1 (14 oz.) can of tomato sauce
1 (15 oz.) can of kidney beans
1 (15 oz.) can of pinto beans

Directions:

Heat oil in a large frying pan over medium heat until shimmering. Add onions and season with salt. Cook, stirring until softened, about 8 minutes.
Add garlic, chili powder and cumin, stir to coat onions and cook until fragrant, about 1 minute. Add ground beef and measured salt to cook, breaking the meat into small pieces with a wooden spoon, until the beef is no longer pink, about 7 minutes.
Transfer the mixture to slow cooker, add the rotel, tomato sauce and beans and stir to combine. Cover and cook until the chili thickens and the flavors meld, about 8 hours on low.
Taste and season with salt as needed. Serve with cheese, sour cream, and chips.
