-1/4 cup Country ham

Produce
-2 Bay leaves, dried
-1/2 tsp Oregano, dried
-1/3 cup Pumpkin or sweet potato

Canned Goods
-2 cups Chicken broth, low sodium

Condiments
-1/4 cup Sofrito
-1/4 cup Tomato sauce

Baking & Spices
-1 Adobo seasoning
-1 packet Sazon seasoning

Oils & Vinegars
-1 tbsp Olive oil

Nuts & Seeds
-1/4 tsp Cumin, ground

Other
-2 cans Pinto, pink or red beans (15 oz. cans)

Directions:
1. In a medium sized sauce pan, heat the olive oil over medium heat. Add the chopped ham and sauté for 4-5 minutes, until it starts to caramelize.

2. Add the sofrito and Sazon seasoning. Saute for 2 minutes until fragrant.

3. Add the tomato sauce, oregano, bay leaves, cumin, and a pinch of black pepper. Saute for 1 minute.

4. Add the chicken stock and beans, chopped potatoes, and chopped cilantro. Cover and bring the mixture to a boil.

5. Once the mixture has come to a boil, reduce heat to a simmer and cook for 25-30 minutes, this will allow the flavors to meld and the potatoes to cook. Check for seasoning, and add Adobo if needed.

6. Serve over white or yellow rice.

This reminds me of the rice and beans that my grandma used to make. Of course it is not the same, but being able to make a similar recipe as she used to make for us when she was alive makes this dish that much better.
