5 - 6 medium potatoes boiled with skins on (usually boil for 20 minutes -- pierce with fork or sharp knife to test if soft in the middle, Cool then put in refrigerator overnight. Peel the next day - skins will easily come off)
10-12 boiled eggs peeled
3/4 cup of miracle whip (adjust if need more when mixing)
splash (1 tsp) of red wine or apple cider vinegar
2 tsp of honey mustard
1 Tblsp of sugar
(1 small/medium onion chopped into small pieces - I don't usually add the onion because Mark doesn't like onion. If Mark isn't around... I add the onion :)

Directions:
Boil potatoes and eggs the day before or morning of making so they have a chance to get cold in the refrigerator. Peel and then slice and chunk the potatoes into small/medium pieces and put into large bowl. Peel eggs, slice and chop - save one egg to slice onto top of salad. Add to potatoes. Add remaining ingredients. Mix with large spoon. If more miracle whip is needed - add. Slice last egg and garnish top of salad. Lightly sprinkle top of salad with paprika to add color.
