1 pound grated Gruyere cheese
1 pound grated Swiss cheese
3 Tbs. flour
1 clove garlic
1 1/2 cups apple juice
2 Tbs lemon juice
Additional apple juice, as needed

For dipping:
baby carrots
1 loaf French bread, cubed
1 loaf Sourdough bread, cubed
sliced apples
etc.

I generally use a combination of recipes, but this year I made mine without a recipe. I start with about a pound of Gruyere cheese, 1 pound of Swiss, grated. I put that in a bag or dish and mix it with 2-3 Tbs. of flour, until the cheese has a light dusting all over. (Sometimes I have to add more flour.) Then, I let the cheese sit out to warm to room temperature. In the meantime I rub a garlic clove over the bottom of my pan (I cook it on the stove first, then move to the fondue pot.) or use a tsp of minced garlic. I add 1+ cup of Apple juice to the pan and heat it to almost boiling. Then I add 2 Tbs of Lemon juice and a handful of cheese, stirring fairly constantly, turning the head down to medium. As the cheese melts I add another handful until all cheese is in the pot. I add additional apple juice to the mixture if the cheese becomes too thick. Basically you have to find the right blend of cheese and juice to make it the viscosity you want. Hope that helps!
