1 cup dried apricots, soaked in warm water for 30 minutes, then drained and diced into 1/4" pieces

1 cup sugar
2 T butter
1 egg
1/4 cup water
1/2 cup orange juice or pineapple juice
2 cups sifted all purpose flour
1 1/2 tsp. soda
1 tsp. salt

Directions:
Directions:
Beat sugar, butter and egg thoroughly. Stir in water and juice. Sift dry ingredients together, then beat into sugar mixture. Blend in chopped and drained apricots. Pour batter in a well greased 9"x5"x3" loaf pan. Allow to stand 20 minutes. Bake in a preheated 350º oven for 55-60 minutes.
