Banana Bread Recipe

4 sticks margarine (or butter)
4 cups sugar
4 eggs
8 or 9 bananas, peeled
1 teaspoon vanilla extract
6 cups flour
1 teaspoon salt
4 teaspoons baking soda
1 cup walnuts, chopped (optional)

Directions:
Directions:
Preheat oven to 350°. Sift together flour, salt and baking soda in a large bowl. Set aside. Melt margarine and add to mixing bowl. Add sugar and mix until blended. Add eggs, one at a time, mixing well after each. Add bananas one at a time while continuing to blend. Add vanilla. Fold in flour mixture (and add walnuts, if desired) and blend until few lumps remain and mixture is smooth and creamy.

Grease 4 loaf pans and divide mixture evenly among them. Bake for 1 hour or until the center of the loaf is firm and a toothpick inserted in the center comes out clean.
