1 lb ground beef
1/4 cup chopped onion
1 tsp. minced garlic
1/4 tsp. dried parsley flakes
1 carton (32oz) beef broth (about 4 cups)
1 can )14.5oz) diced tomatoes, drained
1/4 tsp. Italian seasoning, crushed
1/4 cups uncooked mini lasagna noodle-shaped pasta(mafalda)
or long mafalda broken into pieces
1/4 cup grated parmesan cheese

Cook : 25 minutes

1. Cook beef. onion, garlic and parsley in 6-qt. saucepan over medium-high heat 10 minutes or until beef is well browned, stirring often. Pour off fat.
2. Stir broth, tomatoes and italian seasoning into saucepan and heat to a boil.
3. Stir in mafalda. Reduce heat to medium. Cook 10 minutes or until mafalda is tender. Stir in cheese. Season to taste.

Top each serving of soup with a dollop of ricotta cheese mixed with chopped fresh basil.

(We used mozzorella cheese for ours and that was good too.)

I added 1/2 sausage for 1/2 of the burger and used fresh tomatoes and about 1 Tbs of Italian seasoning . We topped ours with Mozzorella cheese
