Ingredients: Candied Walnuts: 1 cup of Walnuts 1 cup of water 1 cup of sugar 2 cup of canola oil a sprinkle of sesame seeds
Prawns: 1 pd of large, peeled, deveined shrimp 1 cup of cornstarch 2 egg white a pinch of salt 4 cups of canola oil
Mayonnaise sauce: 1 cup of mayonnaise 2 tablespoons sweetened condensed milk 1 teaspoon of lemon juice

Directions:Candied walnuts: Blanch walnuts for a few minutes. Then boil water and sugar in a wok or saucepan, add the walnuts. Stir and boil walnuts for 3-4 minutes. Remove from water/sugar mixture, set aside. Heat oil and fry the walnuts for a few minutes or until golden brown. Remove from oil, separate on a sheet pan and sprinkle sesame seeds on hot walnuts immediately. Let cool.
Mayonnaise sauce: Mix mayonnaise, sweetened condensed milk and lemon juice together.
Prawns: Mix egg whites, salt and a few teaspoon of cornstarch with the shrimp until it becomes sticky. Then dip each shrimp into dry cornstarch until evenly coated. Heat oil and fry shrimp until cooked and light golden brown (about 4-6 min). Remove from oil and fold into mayonnaise sauce. Add walnuts and serve.

Notes: Serves 4-6 people To save time buy candied walnuts (I use Trader Joes Candied Walnuts). Sesame seeds are optional. The mayonnaise sauce will cool the shrimp down, if you like a hot dish, reheat by stirring mayonnaise sauce and fried shrimp in a skillet until mayo starts bubbling.
