1 pkg. (1 lb.) fettuccine
6 T. unsalted butter
1 T. chopped garlic
2 T. flour
1-1/2 cups milk
1-1/2 cups heavy cream
1/2 cup grated Parmesan cheese
1/2 cup grated Romano cheese
1-1/2 tsp. kosher salt, divided
3/4 tsp. pepper, divided
2 lbs. boneless skinless chicken breasts

Cook pasta according to package directions. Drain. While pasta cooks, melt butter in medium saucepan over medium heat. Add garlic and cook, stirring often, until fragrant, about 1 minute. Add flour and cook stirring constantly, 1 minute. Gradually whisk in milk and cream; bring to a simmer, and cook, stirring often, until thickened, about 10 minutes. Remove from heat; whisk in cheeses, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover and keep warm. Sprinkle chicken with remaining salt and pepper. Grill chicken in lightly sprayed grill pan over medium high heat until cooked through; about 6 minutes per side. Remove from heat and rest for 5 minutes. Slice. Divide pasta onto serving bowls; top with chicken and sauce. Serves 6.
