1 9" pie shell, unbaked
3 large Vidalia onions, thinly sliced
1/4 c (1/2 stick) unsalted butter
1 c heavy cream
3 large eggs, beaten
1 c cheddar or Swiss cheese, grated
Kosher salt and fresh group pepper to taste

Directions:
Oven 375º. In skillet over medium heat, melt butter; add onions and cook until soft and translucent but not brown. Set aside.
In med bowl, whisk together eggs, cream and salt and pepper. Add cooked onions and stir to combine. Pour mixture into shell and top with grated cheese.
Bake until center is set and top is golden brown, about 30 min. Let cool 5 min before serving.
