4 medium zucchini and or yellow summer squash, thinly sliced.
1 large yellow onion, thinly sliced
1 larger tomato, thinoly sliced
1 clove garlic, minced
2 c cheddar cheese, grated
4 T green onions or chopped chives, for garnish
1/4 c sour cream
2 large eggs, beaten
2 T olive oil
2 t thyme
1/2 t salt
1/2 t pepper

Preheat oven to 375º. Lightly grease a casserole dish; set aside.
In a large pan, heat olive oil over medium-high heat, then add onion and saute for 2-3 min before adding squash and tomatoes.
Continue to cook, stirring occasionally for 5-6 min more. Add garlic and thyme, cook 1 more min. Season with salt and pepper.
Meanwhile, combine eggs, sour cream, 1 c cheddar cheese in a large bowl and stir to combine. Add vegetable mixture to bowl and stir to coat.
Pour into prepared casserole and top with remaining cheddar. Bake uncovered until top is golden brown, 35-40 min.
Let rest 5 min before serving. Garnish with green onions or chives. Add additional cheese, if desired.
